Hey there friends,

I'm new here but I really like this forum. So I thought I'd chime in with an easy one. My favorite fish is tuna - pan seared rare.

What's your favorite fish? And how would you like that prepared?

Welcome, Chef Vanda: pretty name.

Many kinds of tuna are endangered. The world cannot afford tuna gluttony: I try to keep to the Monterey Bay's Seafood Watch for sustainable choices that will prevent extinction. (Because a world WITHOUT tuna would suck. MCSW has a dndy-dandy clickable guide. You have to consider sustainability as well as things like mercury levels and PCBs.

Hope that helps. So many choices: good to know what's safest for all (including the fish). smile.gif

Having said that, I love sturgeon, which I can sometimes get from my fish monger, and California salmon, and I miss catching catfish from my grandparents' boat in Georgia as a child.

Hey Vanda, welcome.. I dont have a favorite fish..I am going to go with fresh fish as my favorite fish..

I'm rather fond of gurnard, ugly and poor flesh/body ratio, but a fine fish to eat.

I'm partial to wild Coho because it's seasonal and nice to look forward to once a year. Also Scottish salmon. If I could afford it, I'd eat it 3-4 times a week.

Every time i find something I like it turns out to be overfished. At this point I'm down to clams, mussles and sardines.

Never met a fish I didn't like and am hard-pressed to name a single favorite.

For me, I want a handful of bait fish coated in flour, tossed with chiles, mint, and some lemon right now.. Though, I would not say thats my favorite fish.

Pretty much what she said. Although I've never warmed up to monkfish. And after cooking a zillion orders of Chilean Sea Bass and farmed salmon, if I never see either of them again it will be too soon.

FWIW, last night I slow-poached (1 hour!) a piece of tuna belly (locally-caught, natch! laugh.gif ) in spiced olive oil, and it was fabulous.

Welcome Chef Vanda ... It's hard to pick a favorite, but if I had to, I'd go with fresh Alaska King Salmon. I usually prepare it simply, drizzled with a little olive oil and fresh cracked S & P, sometimes baked on a cedar plank, or on the grill, being careful to not overcook it. Halibut is also right up there at the top...

My favorite is the lowly skate, for aesthetic and well as taste considerations. That being said, I generally prefer shellfish, crab and scallops being my favorites, unless I run across a particularly fabulous lobster.
