Read a few things about this recently, including the Times preview.
 
What I'm taking away is that this will serve about three times as many covers as Pujol, serve simpler cuisine, and like Manzanilla and La Mar Cevicheria, will be in some big space in or near the Flatiron.
 
What's the betting on this?

I was talking to a friend about this last night.

Fail.

Like Susur Lee did, like Garcia did, like Acurio did.

I don't know why famous out-of-town chefs think they can come here, open up dumbed-down versions of the their signature places, and succeed. New York is hard enough on out-of-towners, but insulting us like that never works.

Speaking for myself, I was SO excited about this place. But now I couldn't care less.

He's just giving NYC what the Tribecans feared when they rallied against his opening in the neighborhood.

The Times preview tempered my expectations quite a bit, but I'll still check it out.

I read a piece in Details, for what it's worth, which was intended to be wholly laudatory, but repeatedly underlined how this place wouldn't be Pujol.  If so, he's making the Susur mistake, indeed.  As opposed to the Sanchez Romero mistake (open in the same price bracket as Per Se).

 

You'd think people would learn.

eta:  I see it will now offer tortillas with avocado and salt.  so I guess I'm not actually excited anymore.

i did not read the Times piece but i guess i won't be excited either then

 

NYC is really tough on out-of-town restaurants but most insist on running those places in a way they did back home, not acknowledging or understanding that things are done differently here, starting with codes, permits, licenses, etc.  i see that fairly often when i meet with restaurant owners successful where they started but completely mystified why they are not able to hack it here, this goes for anything from german curry wurst joints to venerated roman restaurants. but the dumb-down route is the worst, worse than being genuinely clueless (and, say, smuggling in some primo guanciale). 

 

personally, i'm curious to see what happens with urbo

It's funny because he clearly did get some good advice and is saying all the right things about wanting to be in nyc for a while, making good tortillas, etc. but obviously nobody's buying it. Or at least Sneak isn't. 

 

If Maiz del Mar is any indication, the food is going to be fine, but you'll see about as much of Olvera there as you see Michel Richard at the Palace and service will be a total shitshow.

Yeah, Tribecans were always opposed to Mexicans moving in.  :D

Eater just deleted a comment of mine that pointed this out after they called Cosme a "game-changer".

The new Eater is even more corrupt than the old one.
