Like buses.  You wait ten years for a new upscale French restaurant to open, then a bunch of them come along at once.  Imminent.

Five years ago, he would've left The Modern and opened a restaurant like The Dutch.

Of course, as soon as they do, we bitch that nobody eats like that any more, no matter how good the restaurant actually is.
I didn't tip at Per Se either.

Moved a bunch of stuff about Chevalier to the Chevalier thread, because I was confused to see that I wasn't actually in that thread.
I didn't tip at Per Se either.

Opens tonight.  Eater has photos.  Nicely-spaced tables!  White tablecloths!  Carpeting!   And for those of you who like to dine at the bar, padded backs and seats.

Anecdotal data point: the Millennials I dined with on Tuesday, at least one of whom voiced relief at our not going to Chevalier, all expressed interest in Gabriel Kreuther's new restaurant.

At least from the photos, that room looks way nicer than Chevalier's.
I didn't tip at Per Se either.

It also looks a lot more stylish.

 

I don't think anybody's criticism of Chevalier's dining room is that it was too "nice".

There is a fully functioning website but no menu. :angry:  Grub Street has a few photos of the food.  Lunch is 2 courses for $52.  Dinner is a 4-course prix-fixe @$98.

I note it shares "cream banquettes" with Chevalier.

It also has, uhh, windows. Which Chevalier does not. And the lighting just looks nowhere near as horrible, though I'd have to see it in person.

Daniel does not.  Le Cirque does not (not anywhere you'd want to sit).  Betony does not, unless you're in the front room.  Batard does not. Aureole (the dining room) does not. The Carlyle does not. Le Grenouille does not. Ai Fiore does not. Juni does not. Blanca does not. The Lamb's Club does not. Peter Luger does not.
