It was. I ate that pork shoulder for a week and it was so good. The rest of the mole is in my freezer.
I failed to add that I had a Frenchette chef with me at the popup who couldn't believe how good the food was (he's had Santos' food before and is a big fan but his Mexican was a first for both of us). We'd been to Mexico together a few months ago - funnily enough running into Fabian from Contra/Wildair/UPN at Contramar but that's a story for another day - and this meal was comparable to our favorite meals in CDMX, which were excellent. Maybe we'll see some Santos influence at Frenchette someday...one can dream.
