Easily one of my favorite uses of the Instant Pot is for:

Stock making. 

 

Bought two old birds at one of the Hong Kong supermarkets, for $4.34.  An hour and a half later, 3.5 quarts of beautiful, rich, gelatinous, and yes, delicious, chicken stock.

 

I see paella, risotto, and who knows what else (matzoh ball soup?), in our future.

Still don't use it much for stews/braises etc, but it's become very useful in our house for making whole grains instead of white rice in the 40 minutes or so in which we cook weeknight dinners. Also for finishing off beans when I've underestimated cooking times.

I actually used the IP in slow cooker mode the other day, for a small pork shoulder roast (like 2.5lbs) that I had purchased.  8 hours, then shredded it up into a nice pot of beans - was really good.

I still use the IP more in slow-cooker mode than pressure-cooker.  (BFD)

I know, and when I saw that, I said: "NO!"  Not so much about the meatballs, but cooking pasta in the IP can only lead to crappy pasta, I'm guessing.

A little Instant Pot chicken stock production last night. I had a carcass of a Union Market rotisserie chicken (quite good, by the way), walked over to the gross market under the Manhattan bridge, where I procured a pound of chicken feet for $$1.50, and a few legs for another $1.00 (they were like $.79 a pound), and ended up with 3 qts. of fine stock.

Instant Pot rice - white rice (in yesterday's case, Jasmine), 1 minute cooking, 10 minutes natural release, perfect rice.

I actually managed to sneak the pressure-cooker timing for stock into my life style yesterday.  I have to say, the resultant game-bird stock looked gorgeous.
