FWIW, I also agree that Cantonese seems to me to be capable of, for lack of a better word, "higher" forms of elaboration than Sichuan. But I think, as others have already said, that mainly for reasons of historical timing we've had much less (if any) "haute" Cantonese in New York than "haute" Sichuan.
