I have a ton of beautiful young ginger with stalks and leaves. I've been using the stalks leaves for tea and am attempting to dry some leaves as well. And I've been using the ginger in small amounts for things like spicy roasted bok choy and will also likely make a vindaloo paste.  Any other ideas to use up the ginger bulbs?

It is better to have beans and bacon in peace than cakes and ale in fear.

sandwiches that are large and filling and do not contain tuna or prawns

i have no idea how instant pots work--i feel unsafe using any pressure cooker other than my low-tech indian one which shakes and rattles and lets off steam with loud whistles like a victorian train. but here's a basic recipe for a very tasty simple chicken curry. it uses a second exotic gadget: a blender.

one chicken cut up
1 cup tomatoes
1 medium red onion
1 t/2 tblspn worth garlic cloves
as much ginger
1/2 tspn turmeric
1/2 tspn chilli powder
a few grindings black pepper
2-3 cups water

put everything but the chicken in the blender and reduce to a coarse puree. put the puree and the chicken in your pressure cooker and cook for 10 minutes (or 4 whistle on my old-school pressure cooker). let the pressure subside and garnish with chopped cilantro. eat with rice. thank me later.

if you want to be fancy throw in some carrots and halved potatoes. if you want to be fancier add 1/4 tspn each ground cumin and coriander seed.

note: if you want to be even fancier, saute the puree till oil separates then add the chicken, mix, then add the water and proceed.

Ginger cookies, steamed fish with ginger and scallions (can be done with chicken), tea (using bulbs not just stalks)

You could also just freeze the bulbs and grate as needed.
