Suzanne, had I known I could have picked it up for you when I went shopping out in Queens. Or, could have just taken the subway to the UWS and gone to one of the two kosher markets.

 

Thanks for the offer! It worked out okay after all. Besides the GF matzo meal, and margarine, I got some Ataulfo mangos!

 

 

ETA: As I reread the recipe, I realized that the procedure for making the bagel dough is basically the same as cream puff dough (pâte à choux)! It is a sad testament to my mother's Passover baking that her bagels were lead sinkers (like pretty much all her Passover cakes; at least those tasted pretty good).

The mandelbrot came out OK, though I had to bake them for 15 minutes longer than the recipe said, even on the convection setting.  (Damn oven.)

Guess what I learned today? Gluten-free matzo meal does not behave the same as regular matzo meal. Boy, does it behave differently. I used the proportions in my mother's recipe (actually, a cross between hers and her s-i-l's version, noted as "better) and came out with the gluiest batter I've ever worked with. Had to spoon out as puffs, as it would have been impossible to roll logs and shape them like bagels. They still needed the same long baking time, at the higher temperature. Maybe if I hadn't tried to be so cheffy, they might have come out looking more like Mommy's.

 

OTOH: they taste pretty good. But then GF matzo tastes better to me than regular. I didn't notice that the GF matzo meal already has salt, so I still added the amount in the recipe, and they taste a tiny bit salty to me. Maybe no one else will think so.

Funny. Came out really well even though I snoozed thru a temperature spike. Leftovers went into a brisket hash that made a mighty fine bed for poached eggs Sunday morning.

Can't see the recipe, but it could be pretty much like the batter I ended up with. Except with more eggs, and maybe with regular cake meal instead of gluten-free.

Pretty much

1 cup water
1/2 cup unsalted butter or margarine (4 ounces), cut in 8 pieces
1 teaspoon salt
1 1/2 cups matzo cake meal
5 large eggs
