Grub Street said EXACTLY that it won't be Frenchette North:
 

But it doesn’t sound like Nasr and Hanson plan to revamp Le Veau d’Or; Hanson told the New York Times that “we love the idea of taking over a legacy restaurant” while maintaining its identity. Classics like frog’s legs and tripe à la mode de Caen (which Platt claimed was “legendary among old-time tripe connoisseurs”) will likely stay, though the plan is for the menu to adopt a more seasonal approach.


It's a separate and different restaurant. I wouldn't assume it'll have the same wine program.

I was referring to this simple line at the beginning of the piece:

 

“I’m gonna try for an uptown Frenchette,” the chefs Riad Nasr and Lee Hanson are singing to themselves.

Note that the opening is a made-up attributed quote (or song), and the latter quote is what Hanson actually said about their plans for Le Veau d'Or.

The current brains appetizer is probably their best preparation yet.  (It's very similar to the kidneys on toast.)

Of course, the people writing about this never went to Le Veau D'Or, where you couldn't really get tripe. It was on the menu, but the chef never made it because nobody ordered it.

 

There was the menu, and then there was M. Treboux who would tell you what you could actually order.
