Young beets roasted for an hour in foil, peeled. cut into 6ths, dressed and left to marinate in Meyer lemon/cumin/evoo/bit of brown sugar, s & coarse pepper..    Addictive.   Beets for beet-haters, guaranteed.

Frenchie's at Intersect here in NYC has this raw-fluke-with-beets dish that my dates keep ordering, and each of them goes into a sort of trance at how good it is.


Someday I, personally, am going to have to deal with my ethnic imperative toward borscht.

Laurel and Sage, in Montclair, has an excellent beet salad with local roasted baby beets and field greens, goat cheese, spiced pecans, and candied bacon, in a banyuls vinaigrette.

I was a beet hater all my life, because they were the pickled in a can type. And one day in 2004, I was having dinner at a friends, and she roasted beets and topped them with goat cheese. I know that's a combo that's seen everywhere now, but I was transformed. Voyager your beets look amazing, thank you for another way to enjoy.
