For Mrs. B's birthday I bought a box of IQF Carabineros - anyone have thoughts on optimal cooking? My first thought is a dry pan? But given their IQF nature maybe steaming makes more sense? 

 

Thoughts?

First - optimal defrosting in a bag in a water bath so they don't take forever and start fermenting. 

 

Many options for cooking - you can scissor open and remove the digestive tract (not the pale gonads that sometimes run along it) and then plancha / pan with some oil, shell on. This will be ideal for the goo(d) stuff in the head and the bodies may be on the overcooked side but not by much. May or may not need salt depending on how they were processed. Alternatively you can cut just below the head, steam the tails and plancha the heads.
