Fair enough. So true of all of us who are responsible for putting a plat du jour on the table nightly.

It's not my circus,

I mean, don't get me wrong.  I'm not being self-deprecating about the way my food tastes.  It usually tastes pretty good, and I'm proud of that.  I'm just talking about the way it looks.  I can't truthfully say it looks like shit:  it looks more like vomit.  Not human vomit, either.

Medium rare pork chops, hash browns with splash of green avocado salsa, just fine.

This week Mrs. P was able to make three meals out of a huge Costco chicken. The first night she made beer can chicken. She already removed it from the beer can before I could take the picture. The next day she made chicken tostadas out of the leftover beer can chicken. She baked the tortilla to make it nice and crispy, and easier to hold. Besides the pulled chicken, the tostada contained fresh garlic, red onions, chopped red, yellow, and orange mini peppers, chipotle powder, hoisin sauce, homemade guacamole, radishes, green onions, fresh parsley, queso cotija cheese, English cucumbers, and arugula. With the final leftovers she made a deconstructed chicken taco using the same ingredients as yesterday’s chicken tostadas plus shredded smoky beets (from Fairway) plus blue corn tortilla chips, from Trader Joe’s. We had air fried mini peppers on the side.

These plates give presence to Sneak's "salubrious".   Gorgeous AND healthful.

I am fascinated by Mrs. P's inclusion of hoisin sauce in otherwise latin tilting dishes.    I'll have to give this a try and see what she's up to.    I guess it's not such a stretch since I frequently add splashes of soy or fish sauce to latin or eurocentric dishes.

That is very kind of you Voyager! Chicken is pretty flexible. You can pretty much add anything to it. The Hoisin sauce went very well with it and gave it that extra umami flavor.

Chicken McNugget salad with butter-fried smashed potatoes, red pepper and mushroom.    Momofuku dressing, shower of sweet onion.

I realize many of these plates look skimpy but there is always "more" on the stove or counter.

Faux shu chicken.   Shredded baby cauliflower subbed for cabbage, plain old mushrooms for shitaki.  A heavier marinade than I'm used to.   But the end result good enough.

I had a kilo of pork shoulder from our csa so tried out (like, 10 years too late) the momofuku bo ssam recipe. I reduced the cooking time and salt but the meat was still a bit dry. The dipping sauces were not great either. Luckily I have good kimchi on hand and better sauce recipes elsewhere. Anyway the kids love wrapping things in lettuce — basically the only green food they’re willing to consider — so may invest some time to improve this one.

I cooked dinner for 8 people last night.. Started around 530 and the guests showed up around 7.

I had this beautiful farfalle... I made a vodka sauce using san marzano tomatoes.. Cooked the tomatoes down with butter and onions, added about a cup of vodka.and blended..basil,  then added a half a pint of lobster stock and the bodies f two lobsters I had recently killed and removed the meat.  cream and lobster meat at the end.

It came out really good..

Also roasted two trout and served over creamed pea shoots..

Shrimp scampi.

steamed broccoli.. steam the broccoli in a bit of water that has 4 cloves of garlic, olive oil, wine, lemon, pepper and salt.  Then when the broccoli is finished, i thrown chopped garlic, lemon, parm and olive oil over it and let it get to room temp..

salad with avocado.

i have leftover vodka sauce.. Though it would be a fun idea to make like stuffed shells and to stuff the shells with lobster and cheese and then serve with this sauce.
