This Salt Meadow Lamb is the best lamb I have ever had at home.  Splendid.

Trying to eat through my freezer before another order, but coincidentally we had D'artagnan lamb for dinner yesterday as well, though it might not have been the Salt Meadow? (it was a rack)

In Japan there is this mega-importer of Euro meat  that sells wholesale as https://www.ma-am.jp/ (translate and weep) and retail as high food room.

 

Every week the retail version has a sale or two or three that end up matching wholesale prices. 

 

I feel like if you buy retail you need an intern to make sure you get the right discounts, but if you have access to wholesale prices you just need to wait.

In case anyone is interested, D'Artagnan is having a Black Friday sale of 40% off of selected items through Sunday November 25th. Mrs. P is going to try and cook duck for the first time. We bought a few duck leg confit (for possible duck tacos) as well as several Moulard Magret duck breasts.

Nice sale.  For our graduation dinner from culinary school (prepared and served at the James Beard House), I made an hors d'oeuvre of one bite duck tacos.

Ordered!  I now have to cook the duck in the freezer to make room for the shipment.  (We have a ridiculously small freezer compartment in a super-ridiculous side-by-side.)

We did a sample tasting today of the applewood smoked and Serrano hams, duck, saucissons, bresaola, duck rillettes along with some cornichons, mustard, olives, excellent crusty 3 seeded baguettes, black and white truffle butter. We wrapped the Serrano ham around some Humbolt fog goat cheese and toasted slivered almonds. We really liked the applewood smoked Heritage breed ham. These are all sample sizes so they don’t take up much space.

A few years ago we bought another freezer that we keep in the basement for extra storage space.

We hope to renovate our kitchen in the next couple of years, and a new fridge with more storage space (and no space-hogging water dispenser) is definitely part of the plan!

We got our box, but it was missing the Spanish Serrano ham so I've written to D'Artagnan to see if they can replace just that.
