How can chickpeas and turnip greens be so good ? Start with a soffrito,add some tomato paste,grenada peppers and white wine...simmer down,add cooked chickpeas and quickly boiled greens. Season,then make a meal with some nice smoked sprats from one of the stores in Greenpoint, and maybe a nice piece of cheese to finish. To drink ? Cos Nero di Lupo....what a great rich but dry nero d’avola.

Greenmarket goat is not inexpensive,and when you are rid of the bones, you are not getting very good bang for the buck. I gave up on it, after I couldn’t salvage free leftovers from the restaurants that I was working in. After purchasing a not all that cheap piece of lamb breast the other day,I would add that to the list of not much bang for the buck either, unless you like to eat fat.

Grrr...after a busy weekend of pickling,preserving,and dehydrating peppers,tomatoes,plums,onions,corn and figs
A make me muy contento dinner of rabbit livers and tenderloins with pickled onions and peppers,fried chickpeas and aglianico del vulture. Plum preserves with yogurt and grenada pepper honey for dessert.

The insanity of doing a pop up meal in Brooklyn,and carrying food from my sixth floor walkup in Manhattan over on the subway on three successive days....my knees held out,and it went very well,and I'm not going to carry anything anywhere,for a while...

A recent obsession with corn fritters,sparked by an old Mind of the Chef tidbit with Sean Brock watched in those insomniac wee hours, which then pinged a memory of my mom making corn fritters ,which I liked a Lot as a wee thing. Brock mixed leftover Carolina gold rice with cornmeal batter,and made little fried pancakes with it,saying it was just a thing that his family did with leftovers..what a great idea !,thought I,and the next day did so,with Jasmine rice...which we et with Grenada pepper infused honey. happy ! I decided to delve elsewhere,making a long risen cornmeal yeast batter,into which I mixed in fresh corn,chives,more grenada pepper (git some now!,from Tim Starck,if you are in New York), and deep fried ,tried with various spicy things,but that honey still won best in show. That ,along with a bunch of sous vided and seared octopus from a long awaited visit to Octopus Garden in the aptly named Gravesend, yielded a few meals in this hellishly hot week,with spicy greens and Etna Bianco...no more ninety degrees ,please....

Buckets of rain, buckets of tears, buckets of tomatoes coming out of my ears...not exactly, but too damn hot to cook much.

Lots of sandwiches with pickled green tomatoes, smoked fish, hard boiled eggs,bacon,mayo...roasted these long green red speckled tomatoes for a few hours and just ate them off of the rack. Pass the tums...

So, in the beginning of the summer I had the great idea of renting for the weekend, a house in the suburbs with a pool... I thought it was smart, it would be getting the best of suburban life, without the other soul sucking 360 days of the year.  My parents have a house with a pool in the suburbs but, the problem is, they will be there as well    :P

 

I have looked from here to Pa, south Jersey, upstate, there are not many and they are either disgusting or too expensive for what I want to do.. 

 

Anyway, thought of a great idea.. Some developer needs to buy a few houses or a gated community or something with lots of cheap houses.. Update, put a pool and market these homes to shmucks like me..  Could do a complete package with picking you up, stocking the fridge, a few grills and some beer and you are golden! 

 

So yeh, waiting for this to happen.. In the meantime, i will be checking VRBO and Airbnb for a nice little house with a pool.. 

Real estate taxes, coupled with changes in the federal tax laws regarding real estate deductions will keep this a dream. Lots of homes for sale in Westchester for this reason, not many pools...

Family cooking this weekend: duck breast with blackcurrant/palm sugar/rice vinegar sauce. Kebabs of scallops and shrimp with a nuoc nomish marinade,corn with miso butter,coconut rice, gazpacho classic style,and a baked alaska,regrettably made with store bought ice cream, but still happy making, and lotsa berries sauce. Grilling is a sweaty business in this weather !

Maybe I just have less patience ,but yeah you have to take chances.

 
Yeah, some fool might even try to make ice cream with olive oil, and it might actually revolutionize ice cream flavors and attitudes.   
But, and it's a big but, it was startlingly delicious while sophisticated.
Waiters used to come into my kitchen with customer queries for just a taste,which I refused to do,saying “tell them that it doesn’t represent a lifelong decision...what’s the worst thing that could happen ?”

I liked all of those things right away,but didn’t taste them when I was a young child. The taste of overproofed yeast just turns me off,in whatever form. Maybe I’m just not so jaded that I need to go beyond sensual pleasure in taste, though I do like funky fish and some bitter flavors,but find them pleasurable.

I never cooked pheasant before,and turning the oven on in the house was not going to happen...so stuffed it with bread,cooked giblets and some rendered pancetta,rosemary, and a lemon,then wrapped the whole bird in pancetta,and slow roasted on the grill. I’ve also been slow roasting gypsy peppers whenever I’ve got the fire going. Caprese salad,Roast corn with lime salt and blueberry cobbler for dessert. Summer ! Would do pheasant again ths way,it was tasty with a little smoke on it....

Some tips : do not vacu seal things with liquid,which will get sucked into the machine,and make a mess. For squishable produce,like berries,freeze on a tray first,then vacu seal. Do not seal fresh pasta. You can always press air out of the bags manually,and then heat seal the bag,without using the vacu component.

Agreed...I used,Caviar once,and once only,to get an overpriced meal from this place after knee surgery grounded me. I felt robbed; small portions and food that promised more than it delivered. ...why I rarely get take out food....
