Admittedly exaggerating about them forgetting your face. Just noting out that sometimes the "deep" connection a patron may sense can be one-sided. That personal interaction may be there in the moment, but knowing it's all as ephemeral as cherry blossoms would be a very Japanese way to view it, I think? Mono no aware and all that.

 

 

Yes indeed. There's this bartender @ Four Horsemen who for the first five times or so always acted as if she remembered us before I figured out she's just very very good at pretending to remember people and is actually always too sauced to remember anything at all.

The chefs run the full range from total silence to comedians, and the crowd is predictably a quieter and better behaved version of the crowd here. There's not as much of a bro presence but you certainly get your share of obnoxious rich people and opinionated bloggers.

From an epidemiological perspective - Bacillus causes less than 1% of foodborne illness in Japan, a country where everybody (especially children) eats rice that's been out for hours on a daily basis. Even of those few cases, most are associated with "fried rice", which I'm guessing is code name for Chinese restaurants. 

 

From a biological perspective, with proper cooking, and even a slight lowering of pH, it would be many hours (12-ish) until your spores germinate and multiply sufficiently to cause illness.

 

But then you throw up like a champ.

The most lovely cleaning ladies were two women who had just arrived from some central american rural area and had so little ability to decipher the function of household objects that they simply grouped them by shape. The longs - knives,pens, tweezers, were all friends, as were the rounds, the boxes, and the unreasonably shaped.

This was well over a decade ago. I still can't find anything.

@Ori - with the espelettes, are you drying them for grinding, or using fresh? Both?

 

Confit in olive oil, pulled out the seeds (easier after they're cooked, actually), then ground together into a smooth paste with a bit of salt. Lasted about a week, I'm guessing if you want to keep it longer you'd need to freeze.

Cervo's lamb burger is usually very good, but not a burger. Had better and worse versions at Fat Raddish but wouldn't go out of my way for it. Definitely time for Frenchette to put a burger on the menu.

Our first Chiltepin has ripened, offering hope that we'll have as many as 20 of them. The late blooming garlic chive blossoms are wreaking havoc on someone's honey making efforts I'm sure, and the San Marzanos continue to rot at every end.
