I have just purchsed some fresh Tasmanian truffles. Any suggestions how to eat them? I saw Gordon Ramsey serve a parmesan and shaved truffle thin-based pizza which looked awesome.

Any idea of the species? There are many truffles that are blackish.

Yes, they are black. A deep, earthy fragrance is the only way I can describe. Looks a bit like wombat poo!

Usually it's the white truffles that are shaven over pasta, but if these are that fragrant, you could try doing that. You can also do the same thing with creamy scrambled eggs or an omelet.
You say that you've purchase "some." You can always put one in rice and let the fragrance infuse the rice. Then you'll have some truffle-flavored rice to use in the future. Be sure to use a closed container.
