Anyway this morning I used up a bunch of borderline stuff and made a big pot of ratatouille.
Keep the ideas coming...I am drowning in cucumbers and broccoli especially (from our garden).

My favorite cucumber dish is Austrian/German cucumber salad made with Austrian pumpkin seed oil. (Slice very thin, salt and weight down, squeeze out water, add oil, cider vinegar, black pepper and a pinch of sugar.) This can also be served as part of a "gemischtes Salat" or mixed salad. The cucumber salad can be mixed with an oil and vingegar-dressed potato or lettuce salad. Omit oil and use sour cream instead; add some fresh dill, chives and/or parsley. Serve nice and cold.
I found a recipe online from Fine Cooking that I've been making for years--it's a quick sautee of cucumbers and sugar snap peas with mint and vinegar. This is really great; I serve it with ham on Easter but I think it would work with any number of other dishes as well.

Liverwurst and very thinly sliced cucumbers on toasted rye with mayo. Salt and pepper the cukes after they are on the sandwich. One of my favorite sandwiches.

Hendricks martini with a cucumber slice...
Steam broccoli till tender but still a bit crunchy, cool in ice water and drain. Chill in fridge and serve drizzled with lemon juice and olive oil. Add some red pepper flakes and/or grated parmegiano for a change. I love this as a simple antipasto before pizza or pasta.

Stir Fries, of course. And you cant beat a really nice primavera pasta. God I would really like one of those now.

Anyway no there is no local food bank, the churches around here collect food but they don't take fresh produce. Only dried and canned goods.
