The lunch deal at the EV location is, imo, a steal. Something like $13 for a pizza and a salad.

Getting back to Forgione's comment, this tickled me -

I think his dough is the best I've had in the states.


Ten years ago you never would have heard a comment like that. It would be like someone praising a hamburger joint by saying "it's the best bun in New York City." You'd look at them as if they had two heads. Somehow the crust has become the most important part of the pizza rather that an important but subordinate component.

I think one could argue that the crust is indeed the most important part of a pizza. But then again, I think the bread is the most important part of a sandwich.

I don't think the bread is the most important part of a sandwich, but I do think the crust is as important as the toppings on pizza. In fact, my two most common criticisms of pizza in NY are soft, doughy crust (as opposed to crisp & chewy) and overly sweet sauce.

I think a bad crust can ruin a pizza but I don't think a great crust can redeem mediocre sauce and toppings. It's a subordinate but important component, like drums in a band.

Don't get me started about places that burn their pizzas and call it "char."

I'll say it again: A Mano in Ridgewood NJ is better than Motorino. Slightly better crust, to my taste, & decidedly better balance of toppings.

didn't the brooklyn one close because there were structural problems with the building? the people eating at the thai restaurant that's there now didn't look like they were in danger.

I think in something as simple as pizza everything is important.

also I really miss UPN.

You mean it's actually harder to bake a good crust than it is to open that can of DOC tomatoes, or put a slice of Fra'Mani sopressatta (or perhaps a "farm egg") atop that same crust?
