Bobby Flay recently competed in a throwdown against a Collingwood NJ sandwich shop owner who specializes in grilled cheese. In his version, the estimable chef prepared a super rich sandwich of brie (12 oz), goat cheese (8 oz), and 8 slices of bacon. His worthy opponent used a 1/2 cup of mayo in his sandwich.

Parade Magazine reprinted the recipes as part of the weekly food column by Bobby, but added its own warning that these super rich sandwiches...(Note: The calorie counts are very high. You might want to save these sandwiches for a special occasion or split one with a friend.)

This isn't a deep fried triple cheeseburger, but it is pretty rich.

Serves 4. Per serving: 1120 calories, 68g carbs, 48g protein, 205mg cholesterol, and 73g fat.

You could split them with a family of four. Yeesh.

Holy moly! Why do people think gluttony=good? I love food, and I love rich food almost as much as I love salty greasy food, but I don't think I could eat much of either of those sandwiches.

About the challenger's sandwich, it's 1310 calories per serving (two servings), but I think that's based on the full recipe including the full 1/2 cup of mayonnaise. In the directions, you're only instructed to use 2T per sandwich of the mayonnaise/balsamic vinegar mixture, so I think the calorie count should be much less. Still, that's a lot of calories and fat--like more than my entire WW points allotment for the day!

Neither sounds particularly appealing to me.

BTW: does anyone know whatever became of Glenn, from Melt?

i think he imploded

“One thing kids like is to be tricked. For instance, I was going to take my little nephew to Disneyland, but instead I drove him to an old burned-out warehouse. 'Oh, no!', I said, 'Disneyland burned down.' He cried and cried, but I think that deep down he thought it was a pretty good joke. I started to drive over to the real Disneyland, but it was getting pretty late.”

I heard from somebody last year that he's back in the corporate world, but I don't know that for sure. I know he was held in high regard as an accountant / financial manager for restaurant and beverage companies

To be clear though, it's 8 slices of bacon for 4 sandwiches. I can't imagine using less than 2 slices of bacon on a sandwich if I was using bacon on a sandwich.

Poor guy. About 5 years too early. Imagine if he had opened in the LES six months before the Meatball Man?

While both don't appeal to me either, I don't see the high calorie count. Bobby's version is <300 calories for a whole grilled cheese sandwich, hardly over the top. The other guys might be a little higher but not much once you factor in the extra mayo in the recipe.

Eating a normal burger will have more calories than either of these. And if you're surprised or need a health warning that a grilled cheese sandwich has a high % of fat, well...

This is pretty much what I was thinking as I was reading. I think that a properly made grilled (or griddled) cheese sandwich is a great thing. Neither of these sandwiches sounds appealing at all.

the calorie count is per serving, one sandwich is a serving.
3 ounces of brie is 285 cals
2 ounces of goat cheese 152 cals
2 slices french bread 370 cals
Bacon - 100 Cals
2 tbls butter - 200 cals

= 1107
Why not mayo?

At the bottom of Bobby's recipe, it says

Serves 4. Per serving: 1120 calories, 68g carbs, 48g protein, 205mg cholesterol, and 73g fat

So 1 sandwich really is 1120 calories Just to make sure, I punched the ingredients into my cooking program, and adjusting for certain ingredients (for example, each slice of bread is supposed to be 1", but a normal slice of bread is about 1/2", so instead of 8 slices, I punched in 16), the full recipe really was about 5000 calories, or 1200-ish calories per serving.

Then I checked the challenger's recipe, and his says

Serves 2. Per serving: 1310 calories, 65g carbs, 59g protein, 170mg cholesterol, and 93g fat.

I allowed for a lesser amount of mayonnaise being used (4T instead of the full 9 that the mayo/balsamic combo makes), and still got roughly the same calorie count (1380) per sandwich.

A 1/3 lb bacon cheeseburger or a stacked corned beef sandwich with mayo would be similar.

I agree. I'm not making a value judgment about eating the sandwich - I'm just telling you what the calorie count is.

you know those babies brown up so much better if you slather the outsides of the bread with a mix of butter and mayo before they hit the griddle
