Are these crosnes? Bigger than I've seen before with bright orange flesh like a sweet potato.

they are not. They are sunchokes/jersualem artichokes/topinambour. Similar uses, total different plants.
Why not mayo?

At least, that's what the turmeric root I've bought looked like.

ETA: When he cut them open wouldn't it be quite clear its tumeric?

I thought about that too, but I wouldn't want to be responsible for his velvet jacket getting stained while he's peeling them.

Very orange/yellow flesh. I did wonder if they were sunchokes. And ha, ha, I did chop one up and sautee it and try to eat it. That's when I realized I needed help.

Turmeric is what they are:

And at least I am not going mad, as I am sure I've never used fresh turmeric before. Grate it, like horsradish? Good for arthritis, anyway.

Use whole in stews/curries, no need to grate, just take it out before serving as biting into them is unpleasant.

They also bring world peace.

I can confirm that biting into them is unpleasant. Same reaction, for me, as Szichuan peppers - numbness in mouth.

BTW, world peace would be nice, but right now I wish someone would bring lunch.
