Am I crazy - but isn't a Chipiron a specific type of squid? When you see this on a menu don't you expect small whole squid? Not chopito small, but not plain old squid?
Why not mayo?

Yes, but I've seen it refer to any old calamari even in Spain.

sandwiches that are large and filling and do not contain tuna or prawns
