A highly specialized topic, to be sure, but food critic Michael Bauer recently offered comments on an exemplary establishment in the area.

On my way back to Kansas City I detoured to the Chicken Shack in Bronson, KS, to check out their version ($6.69-$8.49 for three pieces and two sides), which I wrote about a couple years ago. It was also crisp and delicious, and I think I got a hint of garlic powder in the batter; I generally donít like it, but here it was a whisper ó either in reality or in my imagination.

“It must be remembered that there is nothing more difficult to plan, more doubtful of success, nor more dangerous to manage than a new system. For the initiator has the enmity of all who would profit by the preservation of the old institution and merely lukewarm defenders in those who gain by the new ones. ”
