where do baby corns come from?

all joking aside, are they just regular corn that's picked before it's grown?

Aren't they full size and then shrunken like shrunken heads?

google says:

Baby corn is almost always sweet corn, harvested just as it has begun to develop

sandwiches that are large and filling and do not contain tuna or prawns

I had actually found that, but for some reason didn't believe it. I would think the immature corn would be too hard to eat at that stage, even after boiling. But if google says it, I guess it must be true.

Alright. How long can I safely keep duck fat in the fridge, and how do I know if it's gone bad? It was rendered last October, if memory serves.

It lasts a long time if your fridge is really cold. If it still smells yummy, it's fine.

About baby corn, I always thought they cooked or brined it or something to soften it up.

I can never look at it without remembering the scene in "Big" at the buffet with Tom Hanks eating the baby corn.

Oh no, it's real. One of the restos I used to work at served it -- we got it from Manhattan Fruit Exchange. It looks just like, well, little baby ears of corn, with the little husks and silk and all (not much silk, iirc). You could eat it raw, even.

why is meat not cooked very long called "rare" when all the other grades are more directly descriptive?
