well I see we have a summer wine thread but I was wondering if anyone has any favourite summer cocktails that they would like to share with us?

The only down-side to the Gimlet is the number of places that make them with that Rose's Lime Juice (shudder) :( .On a really hot day...gimme a vodka gimlet, straight up, cold enough to make my teeth ache.

But, a properly made one is dangerously good. ;)

That's invaluable! Thank you for the lead.Yesterday, I bought a carton of white peach puree from this range Funkin in Selfridges. Will use to make bellinis, is it just white peach and prosecco or should I add some lime juice?

Came up with a peach flavored drink that was delicious. Vodka, sake and peach nectar shaken and poured into chilled martini glasses served with a slice of fresh white peach and mint leaf. Very refreshing.

I do that, but add a splash of limoncello.Campari with blood orange juice and a sprig of mint.
