Hey guys,

well I see we have a summer wine thread but I was wondering if anyone has any favourite summer cocktails that they would like to share with us?

I'm a complete cocktail tart - I drink them all different all the time, like almost anything so long as it doesn't contain tomato/veg and don't stick to favourites. But somehow you've just got me dreaming of caipirinhas.....

The only down-side to the Gimlet is the number of places that make them with that Rose's Lime Juice (shudder) :( .

But, a properly made one is dangerously good. ;)

My favorite summer drink is a mojito. Very refreshing and deceptively alcoholic.

Yesterday, I bought a carton of white peach puree from this range Funkin in Selfridges. Will use to make bellinis, is it just white peach and prosecco or should I add some lime juice?
Yes, I would not recommend smell, touch or taste when it comes to old cock selection. Opinions differ though. Adam 2/3/05

Yesterday I bought some really good cherries (in a generaly mediocre cherry year) so today I will make guignolet, a cherry-infused wine that Mangeur has posted about elsewhere. I plan to use it as an aperitif if it doesn't come out too sweet, or as a substitute for cassis to make Kir or Kir Royale.

Hibiscus (dried flowers steeped in hot water and strained), vodka, seltzer and a lime twist. A jot of simple syrup, if desired, but I like it unsweetened.

We were invited to a dinner party for a friend's birthday and we were asked to bring a fun, sort of Asian cocktail.

Came up with a peach flavored drink that was delicious. Vodka, sake and peach nectar shaken and poured into chilled martini glasses served with a slice of fresh white peach and mint leaf. Very refreshing.

I do that, but add a splash of limoncello.

At the Jordan Pond house in Acadia they bring lemonade unsweetened, and a little cup of simple syrup to sweeten yourself. It was so refreshing to have sour lemonade that was not sickly sweet. Great summer drink after a hike.
