Oh my first was awful for her first few years. Still not amazing but at least she likes RG beans.

In the last Bean Club shipment, we got a new-to-me variety called Caballero, a round white bean originally from Peru.  It cooks up very firm, so it's good for when you want a white bean that's not as delicate as some others.  N used up our package on 2 separate casseroles: one with cod and olives in a cream and Gruyere sauce, and a Basque chicken one based on a recipe from Delia Smith, using the beans as a substitute for rice.  The latter has lots of bold flavors, including paprika, sun-dried tomatoes, red peppers, black olives, and orange wedges.

Sounds good - I delayed my last shipment, so I haven't seen those beans. I'm trying to use up some of my supply before the next box arrives, or before someone thinks I'm a doomsday prepper.

Therefore, I cooked up a pound of Rio Zapes, with some odds and ends I found in the larder; e.g. a few pork bones and scraps, an old onion, bay leaf.  These are really good just eaten with rice.

We'll probably be doing that with the next shipment; even with cooking beans like every weekend, we can't get through them quickly enough.

I've found they're good for breakfast, with a sunny-side up egg on top, and maybe some diced avocado and tomato!
