I was catching up on my Gourmet Mags over the weekend and I read an article about Benton's. David Chang was quoted in the article, basically calling this guy God. I also recalled lots o' praise on the Ssam thread. So the obvious question:

1. Do I need to mailorder or can I buy this stuff in NYC?

Benton's.
It is better to have beans and bacon in peace than cakes and ale in fear.

I think you have to mailorder, but I did and it was easy. Although I had trouble with the website and ended up on the phone with someone who could not have been nicer. I sent a ham to a friend who grew up in Kentucky and he was thrilled by it. And invited me over to help eat it. :P

Doh. Ignore what I said, which is about Broadbent ham, not Benton's. :P

just spoke to Daryl Benton regarding his ham, and bacon.
I placed a couple of orders for clients....raw bacon anyone :angry:
and some aged country ham.
When I gave my office address he asked if I knew Craft Restaurant (same Street). They sell to Craft and to Momofuko

Does Benton's bacon ship refrigerated? I'd like to order some in the next couple of months, but it will be sitting in a warehouse on the other side of the border until I can pick it up (maybe a couple of weeks after it arrives, but if pressed, I could get there within a few days). I've Googled, and some say it does not ship refrigerated, but to refrigerate it after it arrives. Some say it'll be fine unrefrigerated for a bit.

 

Anyone with experience ordering Benton's bacon who can comment?

i know that zingerman's ships benton bacon frozen but you should call benton's direct to ask how they ship or what the options are

What is the shelf life of your ham and bacon? Our ham and bacon are dry-cured, a time-tested process of preservation that allows them to be shipped across the country without refrigeration. Simply refrigerate upon receiving the items to prolong the shelf life:
The bacon will retain its original quality in the vacuum sealed package under refrigeration for 4-6 months and likely much longer; once opened, the product is best if used within 1-2 weeks. If longer storage is required the bacon can be frozen, but it is our hope that it will be eaten or shared before that is necessary!

Thanks! I'll give them a call before I order. I'm planning to order directly, and as I understand it, my order may take some time anyway if they're busy. And it seems it should be able to withstand a day or so of non-refrigeration, so as long as I can pick it up a day or two after it arrives, I should be good.
