Bought 3 on a whim. What do I do with them? One internet rec was carbonara. Ideas?

Tacos, carnitas or enchiladas???
Or as a casserole with peppers, onions with roasted potatoes.
Or simply marinated in lime and EVOO and grilled.

Okay, you guys gave me reference. i put aside one thick piece for Rich's lime/EEVO grill.
Because the remaining two pieces were thin, I decided to cut them into portion and roll them prior to braising.,
Braised with bacon, beer and usual suspects.
3 to 4 hours in lidded pot, 275F oven,. Defatted jus. Served over spaetzle.
Succulent bundles. Seconds definitely in order.
Will happily buy this cut again. Pure porky pleasure!

So nice to see immediate gratification. That is, ask for suggestions, decide what to make, make it, eat it. Sometimes I wonder how things turn out when people ask.
