Of course my problem with Babs is my problem with most places.

 

I went there one night over the summer.  Their website said they were open until something like 1:00 AM.  I walked in at maybe 10:30.

 

I asked the bartender if they were still serving.  He said the kitchen was closed.

 

I said, "you know, your website says you're open till 1.  You should change that."

"The bar is open till 1," he replied.

 

"Does your website call this place Babs Bar or Babs Restaurant?", I asked.

 

Finally, to add insult to injury, when I asked the bartender if he could recommend a nearby place that was open, his learned response was, "There's this place called Blue Ribbon . . . ."

They did that to me last night. But last night they'd announced in advance they were closing early cuz of Columbus Day.

(I should add that our service at Atla last night was almost unspeakably bad.)

Our service was actually pretty good and I walked out at 11 without feeling rushed. Just a little annoying as we sat down at 945 and I was rushed to order.

But it was still a nice meal.

??? I heard of Babs several months ago.  Bookmarked the website.  When I click on Hours, I get “Coming Soon.”  (And still no menu!)

Reading Wells, I don't even want to think about how many years ago Bobby Flay was hailed for juxtaposing red and green sauces. I was writing about it in 2007, and that was in the context of nostalgic re-visits to his old restaurants.

Babs (Macdougal just above Houston) has finally committed to keeping its kitchen open till 11. When I walked in last night at 10:10 and asked if the kitchen was still open, they told me it would be open for another 50 minutes, as if it were stupid of me to ask.

First, some background. Babs is an offshoot of nearby Mimi. Mimi is a sort of tweaked French bistro that opened a few years ago. Mimi's food was satisfying and kind of interesting -- but sloppily prepared. You had to ignore the sloppiness to enjoy the food.

The chef who "made" Mimi left to open a neo-deli in LA (this is the kind of career move that actually makes sense in today's food culture). After floundering around for a while, Mimi found a worthy replacement in a sous already working in the kitchen. After successfully reviving Mimi, he wanted to have a separate pan-Mediterranean (northern side -- this is NOT a Levantine spot) place, so they opened Babs for him.

I give all this background because the food at Babs turns out to have the same pluses and minuses as the opening food at Mimi did. It's interestingly tweaked and fundamentally satisfying, but sloppy. Everything is kind of gloppy, flavors aren't distinct. It's kind of like my own home cooking, in fact (but MUCH BETTER).

I had uni croquettes with a pepper sauce, fried kokatxas (one can’t help but point our that the Basque Country is on the Atlantic, not the Mediterranean) with I can't remember what kind of sauce, and lobster in a thick creamy sauce with smoked potatoes with lots of truffles on the side. It was all good -- and all gloppy and kind of undifferentiated.

So your opinion of this restaurant is probably going to depend on the level of tolerance you have for glop. Mine is pretty high (otherwise I could never eat at home). Yours may vary.

Did not know Mimi had an offshoot. I can do gloppy if the dishes aren’t priced at $40 and up (Mishiguene).

Anyone who watched Top of the Pops in the UK in the 1970s will have strong associations with the name “Babs.”
