A lot less than onglet from a live horse which will cost you a good kicking.

That's what I wanted - about a pound or so.

I am, of course, not feeding four or five people, and don't want to eat it three days in a row.

I guess the butcher in question thinks a buyer with a large family will come along while the meat is still fresh. His gamble, I suppose; although, as I had just bought several duck breasts, and might have bought something else, I am not sure he's the winner.

Also, the meat is quite strongly flavoured so you don't (I don't anyway) want to eat more than quite a small amount. I am happy to get stuck into a fiorentina that weighs over a kilo, but I really only want maybe 100/150g of onglet; with a nice sauce of course.
I have a regular onglet fix from the beef lady at my local farmers market. I love the stuff.
