And the sea bass, while famously served with the Syrah sauce (but no potato casing) really wasn't well matched with a Nuits-St-Georges.

He's such an innovator, that Daniel. Next year he'll serve the fish with the potato scales and then ceremoniously use a giant scaler to spray them across the room.
