Put ground cinnamon on a baking sheet and place in a 300F oven. Let it "bake" for about an hour.

do you people not put onions in latkes?

My ratio is one onion for two potatoes. I shred the potatoes, then put them in a towel and squeeze to remove the excess liquid. Add the onion, salt, eggs, and perhaps some matzo meal if it's too loose. I've used buckwheat flour in place of AWP for a slightly more rustic (and GF) latke.

If you haven't read The Gourmands' Way:  Six Americans in Paris and the Birth of a New Gastronomy by Justin Spring (I'm ashamed that I needed to type the title out to get the pun), you probably should.


Wilf DEFINITELY should.

It's worthwhile reading, but Spring needed a better editor. Book could have been 100 pages shorter as there was so much repetition.

Drove out to Long Island today to visit the cemetery and do some food shopping. While I visiting my parents' graves, a landscaper happened by and I asked him if he would trim the hedges around my grandfather's grave as it looked ragged which he kindly did. I went into my bag to pul out my wallet in order to give him a something and realized that I had left it at home sitting next to the computer. So I was driving with no money, no driver's license, etc. Needless to say, no shopping was done.

My intention was to make toasted marshmallow ice cream. However, I learned that when roasting marshmallows, en masse, under the broiler one should not place the cookie sheet directly under the flame because otherwise you'll have a fire in your oven. On the plus side, because the marshmallows were on parchment, the clean-up was very easy and I didn't have to toss the baking sheet which was my initial fear. So, I ended up making salter butter caramel ice cream. It's pretty damn good.

Perfect beach day. Water was amazing! And after two years of being intimidated by the waves and surf and the boy embraced it and we had a hard time pulling him out of the water. Best of all, it took us less time to make it back into the city than it did to actually get out to Long Island.
