    I think at the bottom of it the issue here is laziness and dismissiveness vs lack of skill. Your Pueblan place is trying to make ends meet with limited access to information and resources.     Thanks, that's exactly the impression I got from the site and the menu. Wells will figure it out, but of course he's the only one with a mandate not to simply take the restaurant at its word. p.s. however much they lose, it can't possibly be as much as the previous tenant there did.
  7. It's funny how quickly people forget the year+ where the only thing saving them from the sheer terror of taking the subway (which really costs about $6 when you count subsidies) was that their work isn't tied to a physical location.

    The pita recipes are meant for home ovens and home skills. If you bake in a pizza oven (I assume they do something like that at Zahav?) then I guess you can increase hydration substantially to promote bubbles, no? Some Iraqi recipes I have call for adding baking soda on top of the yeast but I guess that's just for fluffiness and not big bubbles. Hydration varies widely - one recipe goes as high as 100% (e.g. in the Nawal Nasrallah book) but most of them are at 60-70%

    Nope. Actually I reread the law and even if it's called an administrative fee it's illegal.

    Well since the (white female) servers expect to get about 15% of sales (minus tip credit), as they would in a tipped situation, the restaurant won't be able to pay them any less, so I'm not sure how their word can be true. But what this really is right now is counting on receiving tips on top of the service charge as people just feel the urge to tip.

    Note that it does nothing like that. In fact it removes a protection (tips can't legally be touched by the restaurant) and doesn't replace it with anything as the restaurant can use this fee for any purpose.

    I thought it's illegal to add a tip to the bill automatically in ny. A service charge is different. (and of course temporarily restaurants can add a covid fee)
  21. You'd be amazed (or not), but more than a few people make such reservations using disposable credit card numbers, leaving the restaurant with empty seats, dead fish, and no recourse.
