One of my last jobs for Union Square Hospitality was overseeing thousands of meals a day being prepared for Delta Airlines for flights out of JFK and LaGuardia. First Class and Coach. There were articles written about this modern marvel of quality ingredients and chef driven meals for in flight dining. Months of R&D and tastings. Hours spent on figuring out how to pack and deliver the meals so that they arrive on airport ready to be dispatched.
I left professional cooking shortly after that.
I thought Hackney Diamonds was their tongue in cheek ironic title play on the hackneyed, tired tropes that they abuse on their embarrassingly limp, retread and increasingly formulaic recent recordings. Oy are they tedious and just plain terrible now.
