  1. Fusillata Casareccia with Sweet Jade Tomatoes and green garlic, topped with too many garlic chives (cuz I have too many). I didn't have any basil, so Voyager, for one, knows what I tossed with it (rhymes with: Christmas urns) (rhymes with: isthmus turns) (rhymes with: Ditmas burns). Quick-seared wild arugula on the side. A racy Southern Italian white would have been best with this. But the farthest south I could get was the Marche. 2016 Brunori Verdicchio dei Castello di Jesi "San Nicolò" This is a very enjoyable wine. Grapefruit and bitters. (Really nice with the tomatoes.) No real depth to it -- but it isn't thin like some Italian whites. I find I'm actually slowing down my consumption of the dregs, to draw it out.
  2. I've told my Paper Plane story a few times on MFF -- but never in this thread. Although it's a Phil Ward creation, the first time I had a Paper Plane was almost exactly a year ago, on the opening night of Rezdôra in NYC. I liked it so much I made it my regular cocktail there. When I was sitting at the bar, I didn't have to order it: one would just appear before me after I sat down (followed, inevitably, by an unordered Airmail) (followed, inevitably, by an unordered Lambrusco for the antipasto). But one night, I was sitting not at the bar but at a table. My waitress was one of the cutest people I have ever had the privilege of gawking at. But I don't think she was very able. "Can I have a Paper Plane?", I asked when she came to take my drink order. "I don't think we do that here," she replied. "Why not? It's right there on the cocktail list," I answered, pointing at the entry for Paper Plane. "Oh, you want a Paper Plane!", she exclaimed. "I thought you were asking me for a paper plate."

  7. Back to goose pastrami heaven. I put ramps on the sandwishes cuz, well, they're not getting any younger. Marcella's smothered cabbage on the side. I know I swore to open a better Alasatian Riesling with this final batch of the pastrami. Imagine my mortification to find that I had none on-site. And much as love this goose pastrami, I wasn't going to open a Grand Old Deiss Blend. I was still pretty committed to an Alsatian wine as a pairing with this. Which left me with a wine that is in fact a personal fave -- but that I feared would be too light, maybe. 2015 Laurent Barth Pinot d'Alsace A stupid worry, since one of the titular Pinots that comprise this blend is Pinot Noir. (Also look for Pinots Blanc, Gris, and Auxerrois.) God is this a delicious wine. And since its appeal isn't based on racy fruitiness or sparkle, it ages, too (within reason). What you get is a tangle of flavors that LOVES food. (Joethefoodie and I have both agreed that it's a Top 5 pairing for Cantonese: it's MADE for delicate food like that.) (Which is why I was a little concerned about the rather indelicate goose pastrami.) Even this food. So you get apples, citrus, surprisingly plums (I guess that's the Noir peaking through), and even more surprisingly grapes. Then you get a spectrum of minerals -- but they're extremely harmonious. God I may love this wine even more than I love goose pastrami.
  8. If you want something light, a Roy Howard: Pour 1/2 oz. Brandy, 1 oz. Lillet Blanc, 1/2 oz. orange juice, and 1/2 teaspoon Grenadine into an ice-filled cocktail shaker. Shake. Strain into a chilled Martini glass or coupe.
