You shouldn't need to presoak.

You need to add some kind of oil to reduce the foam.

Deborah Madison says 20 mins under pressure, slow release, 20 minutes with no lid stovetop.

I find it changes the texture and it's not my favorite technique but if I lived at a high altitude it might be the best choice.

Isn't it about time we had a dedicated thread?   I just received my latest shipment – Yellow Indian Woman, Flor de Junio and Flageolets (all of which I've ordered before) plus Good Mother Stallard,

Curious thing happened today. I put about a 1/2 lb of Madeira beans in water to soak. A couple of hours later, many (maybe 40%) of the beans had split completely in half. I'm charging ahead anyway,

I've missed all you alls so very much.

i pressure cook kidney beans (rajma) all the time, soaking when i remember to but not otherwise. they cook faster when soaked, that's all. i've never had any problems with foaming (you never want to fill the pressure cooker past a certain point) with beans, though there are certain dals (lentils) you don't want to pressure cook for that reason. it's nice to be able to cook kidney beans in less than 30 minutes.

ok cool, thanks guys. i couldn't imagine this being really a hard and fast rule, but i won't deny that i'm a bit paranoid about the pressure cooker, even though it's one of the cuisinart electric ones and has like 20 safety releases.

 

i also will not deny that i'm a bit leery to experiment with beans that cost $5 a lb and risk cooking them in a way that will make them end up shitty, so i figured it was best to ask...

 

mongo, if you're cooking kidneys in 20 minutes from dry, that bodes well for yellow eyes and black beans.

oh, i don't pressure cook rancho gordo beans. indeed given how much they cost i don't cook them at all. we have all our packets (we buy only the golden yellow varieties) formed into the shape of a calf and we worship it.

Steve hasn't seen these yet, but I have been working on a line of RG earrings; with and without miniature chili peppers. The hard part is that each bean is hand-painted with a protective coating that takes three days to dry, but it makes them REALLY pretty to work with!
