The 402nd dinner of The Seventh of April Club was held at 17 in the Alden Hotel, Houston, TX. Executive Chef Ryan Pera once again exhibited his masterful culinary talents with a splendid multi-course dinner.

 

RECEPTION (No Photo):

 

Red Pepper Pancakes with Salmon and Caviar

Crostini with Tomato Salad and Reggiano Cheese

 

Well prepared. Definitely a deft touch with the tomato salad.

 

Served with Charles Heidsieck Millesime Brut '90 -- Classic straw color. Persistent small bubbles. Delicious yeastiness/biscuit flavors backed by solid fruit.

Pan Seared Day Boat Scallops, Parsnips with Pistachio and Aged Balsamic...

Served with Kongsgaard Napa Valley Chardonnay '01 -- Golden yellow. Well blended and balanced oak, floral notes, vibrant melon fruits.

A very generous serving of white truffles accented this delicious dish.

 

Served with Rene Engel Clos de Vougeot '01 -- Lusty bouquet laced with spice. Youthful, good acid backbone, deep core of fruit.
