2. But what I really went there to try was the Waylon Braised Brisket. The Waylon -- smoked coke, bourbon, preserved lemon -- is perhaps my favorite cocktail. Brisket is my favorite cut of beef. Using smoked coke and bourbon to braise brisket is inspired. This dish really works. It now surpasses Matt Hamilton's coffee-braised brisket as my favorite (the Madison Restaurant having decamped to Florida, where you have to be as oblivious as my pre-death parents were to order brisket).

 

COMP DISCLOSURE: Many drinks. An extra dessert.

Smoked Coke? Explain please. Sounds v. intriguing.

They smoke the syrup in a smoker- not that complicated, but easier to remember if you leave while somewhat sober.

Can't blame Tailor, I suppose, but Eater's report of the new bar menu left me a bit cold...

I did see this coming.

 

A general thought. This place seems to have a high novelty quotient. All well and good - they'll attract the people who value novelty. I do wonder what will happen when the novelty wears off. Are people going to keep coming back after their 3rd visit or are they going to move on the the Next Big Thing?

 

And once the novelty crowd moves on, are there enough mainstream folks around who will stretch their tolerance for the exotic to keep this place in business?

I'm surprised that the bar business is not enough to keep them open. Without gloating or wishing anyone ill I do have to say that the fact that this place is closing and WD-50 is not strange to me.
