It's weird, but that salad looks a little like puntarelle.

 

 

Could be slivered endive et al.

 

Agree with both possibilities. But I have no idea what the brownish thing is.

Are you sure that it's meat? It has a tuna-ish character.

 

 

if it weren't so big i would have said it was an anchovy. (my small bite of the dish encompassed only the foliage.)
