i was just thinking about making something with beans, leeks and carrots. i have about 10 or 15 varieties of beans in my cupboards. i think this will be the winter of the bean

I only did that because I couldn't find any celery and so couldn't make a Mirepoix. But the leeks and carrots were, like, great.

The beauty part of this is that you have to braise the leeks anyway. So throwing them into this agglomeration is just doing what you already have to do.

interesting, i would have caramelized them on the stove for another layer of flavor.
