[Recipe] vanilla & yougurt panna cotta with poached peaches

The Globe & Mail has a delicious recipe for this dessert. The idea of boiling just half the cream is intriguing

 

Boil half of the cream with the sugar and the vanilla; put the pod in as well for extra flavour.

 

Once the cream boils, remove from the stove and add the gelatin (drained of the water and gently squeezed to dry it). Stir until dissolved, then strain in a fine-mesh strainer and set aside to cool.

 

While the cooked cream cools, start whipping the remaining cream to a nice thick consistency.

 

Peaches are in season
