Actually, the DO maintain a wait list.   They love to tell you stories of people hopping on a plane from, say, Berlin to rush over when they learn a table has opened up for them that night.

A visitor may be forgiven for asking a more personal question, too: Why is it that Ms. Sanchez, who spent six years as the pastry chef at Noma, the Copenhagen restaurant credited with changing the course of global gastronomy, can now be found slinging Mexican street food for eight hours a day in a space approximately the size of a minivan?

 

 

How about - so she could make some money on her own?

Went to the Rosio Sanchez pop up in NY. Wish she’d open up a place a NY. Just great.

Not sure if I should have started a Just Copenhagen thread or not, but ¯\_(ツ)_/¯

 

I have an 18hr layover in CPH on the way back from the Faroes, landing ~4pm and leaving at 10am, so I only have time for one proper meal :(

 

I met a Vietnamese chef in Hanoi who had worked at Pescatarian and Kanalen. I have so much other stuff to research for the other part of the trip, that I’m inclined to be lazy and just choose one of those unless you guys have a better recommendation.
