Abbylovi
Why isn't everyone freaking out about this? I've made 5 trays of kale chips in the last 2 weeks.
splinky
i've had it fried but never baked. i'd imagine baked would be better and more flavorful. i like the idea of dusting it on popped corn
Daisy
I must try this, I love kale.

Of course I've tried making all the kales available. So far my favorite has been the Tuscan, with the purple my second favorite. The plain green was kinda bitter, but that could just have been me and my cooking skills. I would imagine that this would also work with chard.
Blondie
I'm an addict. I can't even remember where I heard of it first. Maybe an old Moosewood cookbook?
foodie52
I actually made kale chips by mistake. I was roasting a bunch of veggies and also steaming some kale stove top. I had too much kale for the pan and threw some onto my clay baking sheet. It was delicious. By the way, cabbage becomes lovely this way as well.

foodie52
One thing. If you have heart issues and you are on blood thinners, you can't eat a lot of kale.
fentona
Kale chips aren't quite as good as I'd like them to be, but they are still pretty darn good. I haven't made them for a while; maybe I ought to give them a go one of these days. As jas says, eating a head o' kale isn't a bad thing.
fentona
And, you know, there may be a vegetable that isn't made awesome by being roasted with olive oil, but I haven't yet met it.

As jas says, eating a head o' kale isn't a bad thing. haha yes! i may have misrepresented myself somewhat: i can and often do accidentally eat most of a bunch of kale in a sitting. i hope i never am in a situation to need blood thinners. leafy greens are a great source of deliciousness, while still providing a smug sense of healthiness as you scarf vast quantities of them. if i didn't have them, what would i do? Deb Van D
Jacques Pepin makes kale chips on one of his Fast Food My Way eps. He sprinkles them over a bowl of chili. I made them and went mad for them, but I have failed miserably to make my friends similarly enthusiastic. Well, these are people that I work with, sort of my Pretend Friends. If the kale is tough or oldish the result is less fabulous, but it is still a great snack. I'd compare it with popcorn, too, but I don't really like popcorn.
ghostrider
I had these somewhere recently, I think they were mixed in with one of those self-serve salads at Whole Foods. They were a good addition to whatever the dish was.
