Nathan
I find this concept bizarre...the Texas hill country is not known for its chicken, fried or otherwise. but then artisanal fried chicken really doesn't make sense (apologies to Willie Mae's)...it's something that scales well to fast food...that's why Popeyes can be quite good (even, dare I say it, KFC original recipe). now if someone can explain how that McDonald's breakfast chicken sandwich manages to be so juicy (I've paid much much more for overcooked chicken)? Do they inject it with something? it's good (albeit the only palatable thing on the menu).

Daniel
I went and grabbed a drum stick at Hill Country Chicken yesterday... I was pretty disappointed when they got my chicken out of the oven it was warming in.... What I received for 2.45 was a scrawny piece..Not to mention the chicken was not particularly juicy. There are two options to choose from..Unfortunately, the girl working the counter at the time mumbled when she spoke and after the third time I spoke with her, I decided to give up trying to understand.. There were two people ahead of me and it took about 6 minutes to place my order.. When i was going back to the parking lot to get my car, I asked the guys that work right next door.. i said, have you been to the new chicken place.. He was like yeh, i had a 15 dollar sandwich and fries.. The sandwich was ok and the fries were good but, hell, if you go to KFC and spend 15 bucks, you can feed a family of 4 and get a chocolate cake.. He went on to say, place has been crowded for the last two weeks but, this is not going to last.. The only people that can spend 15 bucks a day are big wigs, and they don't eat fried chicken.. While, I am not in complete agreement, I certainly do think the food is better at KFC. And, I don't know about the chicken, if it's organic, or anything.. But, I really didnt see a difference in the quality between Hill Country, Popeyes or Kennedy.
Steven Dilley
The WSJ has a brief piece on Hill Country Chicken. Is this an accurate picture? Because it looks like burnt shake-n-bake.
Wilfrid
Here's my photo: I think that answers the question. That's the "classic recipe," which has indeed just a seasoned flour coating. They also serve "Mama Els'" which has a cracker batter...which falls off.
splinky
jebsus, jospeh and murry, my nana would say that was a "sin against chicken and a crime against humanity". there are children starving in the world and they do that to perfectly good chicken parts?
Wilfrid
I visited early, so they do have tweak time. What amazes me are all the positive reviews I've seen. A brand is a powerful thing.
Wilfrid
Hybird and Blue Ribbon Fried Chicken reviewed at the Pig today. Hybird was the special one. This is the Questlove/Starr partnership at Chelsea Markets.
joethefoodie
I think Hybird must have added those other chicken parts to the menu, because when i stopped by one day a month or two ago, it was only legs, my 3rd or 4th favorite part of the bird. I really like the place on Avenue C -Bobwhite. 3 pieces of chicken, a side and a biscuit for something like $12. Biscuit might not be the best of the best, but the chicken is usually very good and sides are too.
Behemoth
Does Hybrid have a Philly branch?

But I thought it was really good. Take that for what it's worth.

Wilfrid
I can't believe I haven't reviewed BobWhite, but I can't find anything. It is good, but it's a different investment. Although they'll pack food for you, it's essentially a sit-down restaurant. The fried chicken options are the supper ($11.50) or a sandwich ($8.50). It is good, but for comparison purpose it's in a different category from Hill Country Chicken, Blue Ribbon, or Hybird, which are all counters selling chicken by the piece. Long-winded way of saying BobWhite isn't fast-food.
Rich
Had dinner at Riverpark last night for corkage-free Mondays. Their fried chicken was outstanding as was the 1981 Amarone we brought to drink with it.
Wilfrid
I see they like to serve honey with it. Is that a Southern thing, or just an American thing?
