leeks

got some nice ones from the neighborhood fruit & veg stand. thinking chicken & leek pie and leek & potato soup. what else do folks do with leeks? i'm going to wash and prep them all in the same cooking session. am planning to caramelize and freeze whatever doesn't end up in a dish, for later use in rice and noodle bowls.

A little more work but I like a terrine with them (Jean Georges has a recipe or two).

 

Also like them with mushrooms -- a bread salad, with eggs, etc.

Vinaigrette, as AB suggested. Esp. good with the creamy vinaigrette from Amanda Hesser's NY Times Cookbook.

 

Wrap in slices of ham, braise, glaze with béchamel and a sprinkle of cheese.

Maybe doesn't spotlight them as much, but I do love them in a quiche with Comte and a little mustard.

I do make leek and potato soup often...even water-based (a la Julia, in The Way to Cook), it's pretty damn good.

 

They're classic in any number of Chinese dishes - but not caramelized first.

You can make a filling from cooked leeks, potatoes, cheese or some other umamifier, stuff it into the outside layer and grill.
