Last year's feast featured black bear on a stick, pheasant jerky, ostrich tartare, kangaroo saltimbocca, and python shu mai. Celebrity chef David Burke created a partridge and snail "goodie pie," which also featured pistachios, garlic and the odds and ends of a pig.

The roster of Jersey chefs includes Burke, Craig Shelton, Ryan DePersio of Nico Kitchen + Bar in Newark and Fascino in Montclair, Corey Heyer of the Bernards Inn, Bryan Gregg of Montclair's Escape, and Michael Carrino of Montclair's Pig & Prince.
