Mushroom and Stracciatella Toasts

WSJ from Joe Kindred, owner of Kindred's in Davidson NC. This is griddled bread smeared with stracciatella di bufala cheese and scattered with seared mushrooms and mint,


The key is making the toast in a smoking hot cast iron skillet, with the olive oil smoking. Flip the toast, remove, then sear the mushrooms. Smear the toasts with the cheese, top with mushrooms and mint. Serve.
