What are you doing with your eggs? I was just gifted with a dozen duck eggs. I'm thinking softly scrambled for a few, but I was also thinking of sangkhaya (Thai coconut custard). The last time I made sangkhaya it failed miserably, though, and I don't want to waste my eggs!

This time I scrambled them. They're great in carbonara. Omelettes, of course. Just however you cook eggs.

Drop a few duck yolks into half soy half dashi, or just soy if you're lazy. Let them sit in there for a couple of hours. Remove and drain carefully and place on whatever you want to become silky umami magic.

Yes, but it might take longer (2-3 days) to reach the same consistency.
