Frenchie's at Intersect here in NYC has this raw-fluke-with-beets dish that my dates keep ordering, and each of them goes into a sort of trance at how good it is. And one day in 2004, I was having dinner at a friends, and she roasted beets and topped them with goat cheese. I know that's a combo that's seen everywhere now, but I was transformed.
