Part of of being a good counter service chef is being able to manage situations where one party is getting too annoying towards another.

Also an interesting discussion how sushi became acceptable guys night out food to that crowd.

 

I think it comes down to:

 

1. It’s expensive.

2. It’s simple to understand: Fish. Rice. As opposed to a more complex kaiseki, where bros might accidentally display their ignorance attempting to talk about it.

3. It’s expensive.

It does sound like Sutton’s brosperiences were pretty mild on the douchebag spectrum. Some of them not even on it, more just chatty neighbors. At least they were talking about the food. It could have been much worse. The next table over from us last time at Aska was a triple douche sundae supreme, chattering away about expensive watches, Burning Man, and attempting to one up each other with Instagram accounts of women they claimed to have slept with. (Granted, the meal was so underwhelming maybe they were just bored. Still, though.)

 

And yeah, beer is a proper pairing for sushi. More proper than wine.

I mean I do it too. You hear me talk trash about my friends mcmansions.

 

Sure it's mostly punching up but just be aware that what's going on.

yeah, i'm responding to sutton's specific complaint which seemed to be that someone talked to him about a piece of nigiri when he wanted to be lost in silent zen contemplation of it.

If I’m paying $700 for some fish, and dining solo, I really wouldn’t want some stranger nattering at me. I think you can want to concentrate on what you’re eating.

 

 

yeah, but if some guy leans over while i'm eating a piece of great sushi and says "isn't that great?" i'd say yes.

 

at any rate, it's interesting to see this sort of censoriousness in a fine dining context which is now otherwise almost entirely about being uncomfortable in loud rooms.

what are the odds that sutton would object to that in a review of aska as well? it's funny how high-end japanese food brings out finger-wagging censoriousness in critics who would probably rail about stuffiness in other high-end culinary contexts.

though i actually i think the "where" is relevant too. i suspect sushi invites this kind of response from suttton'ish figures (i.e us) as much as it does the kind of response he decries in finance bros*.

 

 

*though again, "isn't that great?" is not evidence of the downfall of human civilization.

Yes, but not just because that's a place he's ceded to them, he also sees steak as something that can be done as well if not better at other places.

 

Wine has a similar dynamic.
