Bruno Albouze (Not Dead)

I've been obsessed with the Great British Baking Show for a while.  Whilst googling recipes for a Charlotte Russe, I came across this video for a Frasier Cake:

 

 

Holy canoli.  I was hooked on Bruno.

 

He worked at Place Venome and was the head baker for Alain Ducasse at Plaza Athenee.  For some reason, he moved to San Diego.

Now he's pumping out videos.  Mostly amazing desserts, but a lot of terrific savory entrees.

 

I've tried the Frasier Cake and Plaisir Aux Nois:

 

 

Last night I made the Countryside Apple Pie (haven't tasted it yet):

 

 

I'll be doing the Banana Croustade tomorrow:

How does this work for the "diet?"

These aren't meant to be eaten,    They're sculptures, art..   Ouvres de maître.

There are no calories when licking the beaters.

 

You just have to compensate.  For example, to offset the apple pie I'll have tomorrow night, I'll skip breakfast and lunch.
